Avocado and poached egg are guilt-free snacks that can be used as toast toppings. In this recipe, brown rice cake is used. But instead of rice cake, you can also use bread. This will yield a perfect avocado and poached egg on toast snack option. To make toast avocado poached egg, just toast the bread piece on the tawa with a little oil from both sides.

Egg Guacamole Rice Cake Recipe:

Ingredients:

  • Poached Egg: 1 
  • Avocado: 1/4th or 30 g approx.
  • Brown rice cake: 1 piece
  • Lemon Juice: ½ lemon
  • Tomato: 25g
  • Onion: 25g
  • Chilli flakes: to taste
  • Salt: to taste
  • Black pepper powder: to taste
  • Finely chopped coriander

  • Carbohydrates: 12g

How To Make?

1. Poached egg:

  • Boil water in a pan.
  • Take some of the boiling water in a ladle.
  • Pour an egg into the water taken in the ladle.
  • Then slowly dip the ladle in the boiling water.
  • After 2 minutes, take out the ladle and drain the water from the ladle.
  • Take off your poached egg and put it into a plate with the help of a spoon.

2. Poached Egg Smashed Avocado topping:

  • Wash and peel one ripe avocado.
  • Deseed it and then mash it in a bowl.
  • Add lemon juice, chopped onion, tomato, and coriander.
  • Sprinkle some salt, black pepper powder, and chili flakes.

3. Egg guacamole rice cake:

  • Take one brown rice cake.
  • Spread one tablespoon of the prepared avocado topping over it.
  • Now put your poached egg over it.
  • You may simply use boiled egg whites or boiled whole eggs.
  • Now sprinkle salt, black pepper powder, and chili flakes on it.

Note: you can use hard boiled whole eggs or just egg whites in this recipe. Rice cake can be replaced with whole wheat bread slices.
