How to make Foxtail Millet Salad?

  • In a saucepan add in the millets along with 1 cup of water. Bring the millet to a boil, then turn the heat to low.
  • Cover the pan and allow the millets to cook for about 15 to 20 minutes until all the water is absorbed and the millets are cooked. You can also cook the millets in the pressure cooker to speed up the cooking process. The millet should be grainy at the end of the cooking process.
  • Add olive oil and salt to the millet to prevent it from sticking to each other. Allow the millets to cool completely. It will fluff up when it cools down.
  • In a large mixing bowl, combine the cooled millets and the remaining ingredients. Toss well to combine. Once well combined, check the seasoning levels and adjust to suit your taste.
  • Serve Foxtail Millet Salad along with Ragi Tawa Paratha and Dhingri Matar for a complete meal.
